Finally edging back to a new normal. I'm still advocating for soldiers in the background but my research is done and I'm moving forward with what I have.
My son was here over the holidays and I had made a chocolate cake with buttercream frosting. As usual I made too much frosting so I just stuck it in a container and put it in the fridge. This morning I decided to find another use for it. Cookies!
Keeping it extra simple I used a box cake mix. They are amazing! Anyone can whip these up in such little time. To save even more time use store bought (yuck! Did I say that?) frosting. But if you like that frosting by all means save yourself the time of making your own.
1 box dark chocolate fudge cake mix
1/3 cup oil
3 eggs
Preheat oven to 375F.
Mix all together with a spoon until most of the dry lumps are gone. Spoon onto cookie sheet covered with parchment paper.
Bake for 9 minutes. Remove from oven. Let cool for 2 minutes before moving cookies to cooling rack.
Let cool completely then frost.
Chocolate Frosting:
1/2 cup butter, softened
3/4 cup baking cocoa
3 cups powdered sugar
1/3 cup milk, more or less
1 teaspoon vanilla extract
Mix sugar and cocoa together. Add enough milk to make spreading consistency.
Add small amount additional milk, if needed. Stir in vanilla.
