One box of cake mix and a can of pumpkin. Well that's quick and easy. To make it better, I love pumpkin muffins!
So let's try this out.
Pumpkin needs spice, so I chose a spice cake. Oh and chocolate. Must have chocolate.
Toss it all in a bowl. I used about a 1/2 cup of mini chocolate chips.
Start mixing it up.
It's very very thick.
I could not mix out all the little bits of cake.
They do not spread out in the muffin cups.
Bake at 350F for 20-25 minutes.
They have a very rough texture.
Fresh from the oven. Crumbly and dry. But keep reading...
They tasted pretty good. Not great, but good. I was not overly impressed but I know I will revisit this recipe. Next time I will add just a little water to thin it out. Maybe 1/4 cup and see what happens.
I stored the muffins in a ziploc bag, after the 2nd and even better the 3rd day the muffins were very moist and well worth eating.
I'm still going to add just a bit of water. Just because I don't like the rough, course texture.
So yes, go ahead and use this pin. Use water if you want or not. I think there is leeway in this recipe.
