Sour Milk Spice Cake

Last week I made applesauce. There was still some left and I didn't want it to go to waste. Second problem was I had milk in the fridge that had gone sour. I found a solution. Spice cake. Spice cake with cream cheese frosting. Let's make this better and not add any egg and reduce the fat and still get a heavy moist cake. Yum! I mixed everything up and the scent from all the spices was heavenly. I asked my husband to smell it and he said "I don't like spice cake." Sigh. Oh well, guess this one's for me. Later he had to try a piece that was devoured. Guess it must be good. If you do not have sour milk you can sour your own with a 1 teaspoon vinegar or lemon juice in 1 cup milk. Cherry Syrup

I decided this morning that I had more than enough cherries to experiment a little bit. I searched online for recipes for cherry syrup to can and really didn't find any that were great. Some called for more cherries, less sugar, longer cooking times, no water etc. I wanted to stay within the canning guidelines so took ideas from them all and made sure I used lemon juice to make it acidic. I also did not make a large amount. 4 half pints is what I ended up with. That should last for a very long time. Other than cherry soda or cherry lemonade I will be on a mission for recipes that use cherry syrup. It will be a huge plus if there is chocolate in the recipe. At this point too I am quite sick of cherries for this year. Tomorrow I will finish up the maraschino cherries and then I will be completely done with them. This is how 20 pounds of cherries got pitted. One by one. On top of the syrup I made 10 more pints of cherry pie filling today. I believe 20 pints ought to last...

Mikey Howard Eulogy

Mikey was never one to put himself first. Even with a terminal illness, his pain was always secondary to his primary mission; taking care of the people he loved. He kept his sense of humor right up to his very last moments. He was loyal to a fault even in adversity. He would repeat a portion of the Soldiers Creed, “I will be loyal to those with whom I serve.” In fact in the eight years I served in the Army, Mikey was one of maybe two people that joined out of a sense of patriotism and a genuine desire to serve others. Mikey served everyone whether they were military or not. One of the very first things I noticed when we met was his kindness toward all mankind. He didn't care who you were or where you came from, if he felt someone was lonely and left out he would remedy that in a heart beat. There is no way to capture his total being in such a short time.
